Basil Spinach Pesto [gluten-free, vegan, paleo]

IMG_2836Pesto has ALWAYS been my favorite pasta sauce ever since a young age. There is something about it that I have always loved. I love, love, love basil and the powerful taste of fresh herbs. I love pesto on everrrrything – not just pasta! I think of it as a sauce for any and everything – roasted veggies, grilled meats and seafood, thrown on top of avocado toast (if you haven’t tried this, you must – you’ll thank me later!), and the list goes on.

Not only is this pesto packed with flavor and taste delicious, but it also has so much nutrients! I always like to add spinach to my pestos for some extra greens (let’s be real, can you ever get enough?) and olive oil and nuts for a nice dose of healthy fats to help keep me full and satisfied. This is by far the best pesto I have EVER made. It is creamy, super flavorful, and does a dance on your tongue.

Believe it or not, even though I love pesto a lot, I never find myself making it since I used to think I didn’t “have the time.” This recipe, however, really reminded me how easy it is to make and that it takes literally less than five minutes. Any recipe that tastes this good and is this easy to make is right up my alley, and who doesn’t love a delicious and easy recipe, right?

And yes, this pesto is vegan, but it still has a creamy and rich flavor thanks to the good quality olive oil and cashews. My favorite way to make something creamy is with cashews, and they surely did not disappoint in this recipe. I love making vegan recipes, and this might just be my favorite one that I have made to this day!

Ingredients :

  • 1 + 1/2 cup packed basil leaves
  • 1 cup packed spinach
  • 1/2 of a lemon, juiced
  • 1/4 cup extra-virgin olive oil
  • 1/2 cup raw, sprouted cashews
  • 1/4 tsp pink salt
  • 2 tb filtered water (for thinning – if you prefer a thinner sauce, add some more)
  • Optional: 1 clove of garlic

Instructions :

  1. Place all ingredients into a food processor and process until smooth.
  2. Store in an airtight container in the fridge. Enjoy over pasta, spread on toast, as a dip, or by the spoonful (’cause no one’s judging over here!).
