Turkey Bell Pepper Meatballs with “Creamy” Avocado Sauce [gluten-free, paleo]

IMG_9820All you cilantro lovers out there… this recipe is for you!! In all honesty, I used to strongly dislike cilantro, but my disliking didn’t last for long because now I love it. Thank goodness my palate changed cause now I’m a cilantro queen. I put it on everything – from throwing some into a salad or sprinkling some on top of avocado toast (literally so good, you must do it). And if you’re feeling really adventurous, throw some into your smoothie – don’t knock it till ya try it, it adds a whole new dimension!

So with all of that said, I decided to make these delicious turkey meatballs with the most heavenly sauce I have ever created. Creamy, fresh, tart, bursting with flavor – that is what this sauce is.

I served these meatballs with the sauce over zoodles (zucchini noodles) and they were divine – definitely try these with zoodles to make a full meal out of this! These meatballs and sauce are a super easy, tasty, and yummy dish that will leave everybody wanting more. I hope you enjoy these as much as I do!

[makes 14 meatballs]

Ingredients : 

Meatballs 

  • 1 lb organic ground turkey
  • 1/3 cup red bell pepper, diced
  • 1/3 cup green bell pepper, diced
  • 1/3 cup spinach, finely chopped
  • 1/3 cilantro, finely chopped, packed
  • 1/4 cup almond flour
  • 1/2 tsp onion powder
  • 1 tsp oregano
  • 1 tsp salt, or to taste
  • 2 tb avocado oil

Avocado Lime Cilantro Sauce 

  • 1 ripe avocado
  • 1 cup cilantro, packed
  • Juice of 2 limes
  • 3 tb water (for thinning)
  • Salt to taste

Instructions : 

Meatballs

  1. Preheat the oven to 400º and get out an oven-safe skillet.
  2. In a large bowl, combine all of the ingredients for the meatballs and mix until everything is evenly and well combined.
  3. Using an ice cream scoop (or two spoons or even your hands), form the mixture into 14 small meatballs.
  4. Heat your skillet with avocado oil over medium-high heat and add the meatballs. Brown the meatballs on all sides and then transfer the skillet to the preheated oven to finish cooking.
  5. Allow the meatballs to cook for 9-10 minutes in the oven.

Avocado Lime Cilantro Sauce 

  1. In a high-speed blender or food processor, combine all of the ingredients for the sauce and blend until very smooth and creamy. Adjust salt to taste.
  2. Serve sauce with turkey meatballs and devour!
